- Put your collected 4 gallons of sap in a pot. Add 12 gallons of honey or 8 pounds of brown sugar; whichever of the two you have, and heat the mixture.
- As the mixture boils, stir until there is total integration of the two.
- Remove from the heat and add the cut bark and twigs and allow to steep for an hour.
- Strain all the bark and twigs using a fine-mesh strainer and place the remaining solution into another container.
- Add a cake of yeast and cover the container with a clean white cloth until it ferments.
- Allow it to sit for 2 weeks until all the cloudiness has been cleared.
- Bottle and store in a refrigerator for consumption at your own convenient time.

- 4 quarts of filtered water
- ½ cup of molasses
- 1 tablespoon of sassafras
- 1/8 teaspoon of ale yeast
- ½ teaspoon ginger (crushed)
- Brown sugar 1 ½ cups
- Vanilla, 1 bean which has been scrapped after splitting
- 4 sprigs of chocolate mint
Preparation directions for root beer
- In a saucepan, mix 2 quarts of water, sassafras, ginger, vanilla and mint then boil then simmer before allowing to cook for about 10 minutes.
- Remove the saucepan from the heat and allow to steep for 2 hours while covered.
- Using a fine mesh strainer, strain the solution into a large saucepan.
- Add the remaining water together with molasses and brown sugar into the already strained solution then stir until the mixture is well integrated before covering.
- Once it has cooled to about 75oF, add ale yeast and for about 15 minutes let it just sit.
- Fill your plastic bottles with the mixture but remember to leave about 2 inches of space at the top. Screws the bottle caps and keep them at room temperature for 1 ½ days.
- Open the bottles carefully and slowly to heck if they are well-carbonated.
- If the bottles are well-carbonated, go ahead and transfer them to a refrigerator for 48 hours before drinking. Carbonated root beer can be stored in a refrigerator for a month.
- In case the bottles aren’t sufficiently carbonated as in step 7, reseal and let them stay for another 24 hours till proper carbonation is realized.
Adding sarsaparilla root onto this process at step 1 will yield sarsaparilla root beer.

Just like birch beer, root beer has some earthy taste as well. However, this is accompanied with some unctuous and acidic hints.
